Cajun Blackened Catfish by Chef Roland

4-6 oz catfish filets
Cajun Seasoning

Method:

Gently cover filets in olive oil. Sprinkle, then gently run cajun seasoning on both sides of filet. Heat cast iron skillet to approximately 350-375 degrees. Cook approximately 4 minutes on each side. Fish will be white and flakey when done. Serve on bed of rice, with a vegetable.
