SALAD.jpgSummer Citrus & Blue Cheese Salad

Ingredients:

For Dressing
¼ cup orange juice
¼ cup grapefruit juice
2 tablespoons white wine vinegar
½ Cup salad oil
2 tablespoons honey
2 teaspoons grated fresh ginger
¼ teaspoon salt
Pinch red pepper flakes
2 grapefruits, peeled and segmented
2 oranges, peeled and segmented
1 cup fresh blueberries or other fresh berry
¼ cup finely chopped red onion
1 cup blue cheese crumbles
6 cups of your favorite salad mix
2/3 cup sliced almonds, toasted

Method:

To make dressing, in a mixing bowl, combine juice, vinegar, oil, honey, ginger, salt and pepper flakes. Blend to mix thoroughly. In bowl combine fruit, onion and dressing. Set aside at least 10 minutes or up to 1 hour. To serve, line four individual plates with salad mix. Spoon fruit mixture over salad mix, dividing equally. Sprinkle almonds & blue cheese crumbles over salads. Serves 4
To toast almonds, spread on a cookie sheet. Place in 350-degree oven and bake 5 to 7 minutes until almonds are light brown; shake pan a couple times during baking to evenly cook them
