Crispy Asian Slaw with Sesame Vinaigrette

Ingredients:

1 Pound thin shredded Napa Cabbage
1 cup chow mien noodles, or 1 cup fried spaghetti noodles crumbled
½ cup shredded Carrots
1 Apple, cored and diced small
½ cup julienne green peppers
1 cups Sesame Dressing
Napa Cabbage Leaves, 3-4

Black Pepper, to taste
2 tablespoons toasted Sesame Seeds


Method:

Mix first 6 ingredients together. Lay napa cabbage leaves on serving platter. Place slaw over napa cabbage leaves. Sprinkle with sesame seeds and black pepper.

Sesame Dressing
¼ cup Rice Vinegar
¼ cup sesame oil
3 tablespoons peanut butter
2 tablespoons lime juice
1 tablespoon honey
1 teaspoon ground ginger
1 tablespoon hot or sweet chili sauce

Whisk together all ingredients. Yield -1 cup
