Garlic Shrimp & Chicken in Cucumber Nests
w/Tarragon Dressing

Ingredients:

2 tablespoons Fresh Chopped Garlic
¼ Cup Lemon Juice
1 teaspoon Olive oil
1 tablespoon Balsamic Vinegar
¼ cup minced red onions
Salt & Pepper to taste
1-cup cooked shrimp, (peeled & de-veined)
1-cup cooked chicken meat, diced

1 Large Cucumber, peeled, cut in ½ lengthwise, and julienned
1 cup Shredded Salad Mix
Fresh Julienne Tomato Strips

Dressing
1 tablespoon olive oil
¼ cup minced onion
1 teaspoon tarragon
½ cup white wine

¼ cup yogurt
3 tablespoon fresh Lemon Juice
¾ cup Olive oil

Method:

Mix first eight ingredients together in a bowl. Marinate for 20 minutes.

To serve, Lay cucumbers, salad mix, and tomato strips on a plate to make a "nest". Place shrimp & chicken on top of nest and drizzle with dressing.

To make dressing, heat olive oil in pan. Add onions, and tarragon and sauté for 1 minute. Add white wine, cook for one minute, then remove from heat. Chill slightly. Whisk in yogurt, Lemon Juice, then slowly drizzle in Olive oil. Dressing will emulsify as you drizzle in olive oil.

Makes 2 salads
