BBQ Rub Salmon
Ingredients
¼ cup brown sugar
½ cup paprika
3 tablespoons black pepper
4 tablespoons coarse salt
2 teaspoons granulated garlic
2 teaspoons onion powder
2 teaspoons celery seed
1 teaspoon cayenne pepper
2 pounds Salmon Fillets, boned and skinned
Method
Combine all ingredients in a mixing bowl and stir(your fingers work best!). Store in an airtight jar and keep away from heat. Makes about 1-1/3 cups.
Lay salmon on a flat surface. Sprinkle rub on all sides of salmon. Rub in with your fingers. Let sit for 30 minutes before you cook. Preheat your grill or you may use a cast iron skillet. If you're using a skillet, pour about 1 tablespoon oil per salmon fillet that you cook. Cook salmon for about 3 minutes on each side, mopping with the mop sauce frequently(see recipe). Take off the grill and serve with your favorite beans.
Fresh sliced avocado also compliments this recipe!
Simple BBQ Mop Sauce
Ingredients
1 cup white vinegar
2 teaspoon coarse salt
2 teaspoon black pepper
1 teaspoon(or more) hot pepper flakes
½ cup thin sliced onion
2 teaspoon chopped hot pepper, like a jalapeno
Method
Combine all ingredients in a bowl and whisk until the sugar dissolves. Brush on grilled meat after the outside is seared. Best if used the same day it is made.
