Avocado Bread
Ingredients
• 2 cups all-purpose flour
• 3/4 cup sugar
• 1-1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• ½ teaspoon cinnamon
• 2 large eggs
• 1/2 cup mashed avocado (1 medium avocado)
• 3/4 cup buttermilk
• Zest from one orange
• One avocado sliced and tossed in lemon juice for garnish
Method
Preheat the oven to 375 degrees. Generously grease a loaf pan.
Combine the flour, sugar, baking powder, soda, salt, and cinnamon in a large mixing bowl. Whisk to blend thoroughly.
In a separate bowl, beat together the egg and avocado. Stir in the buttermilk and orange zest. Add to the dry ingredients and blend well.
Pour into the prepared pan and bake for 50 minutes to 1 hour or until a wooden pick inserted in the center comes out clean.
Serve with fresh avocado slices
Yield: 1 loaf
