Quick Fried Fish w/ Spicy Mandarin sauce
Ingredients
Boneless Fish(Cod or halibut), cut into 2" X 2" pieces 1 pound
Cornstarch 2 cups
Black Pepper 1 tablespoon
Oil for frying
For Mandarin Sauce
Roasted Peanuts 1/4 cup
Mandarin orange liquid 3/4 cup
Mandarin oranges 3/2 cup
Cornstarch 1-1/2 tablespoons
Juice from 1 lemon
Salt pinch
Cajun Seasoning pinch
Sour cream or plain yogurt 1/3 cup
Method
Combine cornstarch and pepper. Dredge the fish pieces in the mix. Shake off excess. Heat oil to 350 degrees (or medium high heat) in a skillet. Carefully lay fish pieces in oil and cook for 2 minutes each side. Remove fish. Set aside. In a sauté pan, over medium high heat, add peanuts, mandarin oranges & mandarin liquid. Bring to a boil. Mix cornstarch w/ lemon juice. Add to mandarin mixture. Bring to a boil. Add salt & Cajun seasoning. Take off heat, and then fold in yogurt or sour cream. To serve, pour sauce on serving platter. Lay fish pieces on top of sauce. Garnish with more oranges and peanuts if desired. Chopped green onions are also a nice garnish
